Your Mom's Carrot Cake
2 cups Sucanat Sugar
1-1/2 cups Vegetable Oil (Sunflower, Almond)
4 Eggs
1-1/2 tsp. Vanilla
1-1/2 cups Spelt Flour
1 tsp . Baking Soda
2 tsp. Cinnamon
3 cups Grated Carrots
Oil and flour 3 or 4 round cake pans or muffin tins (makes 24 muffins).
In a large bowl, mix sugar, oil, eggs and vanilla for 2 minutes. Gradually add flour, baking soda and cinnamon. Fold in carrots last. Pour batter into floured pans and bake at 350° for 30 minutes for cake, 25 minutes for cupcake or until firm to touch.
